They say patience is a virtue. This is true when growing Lemon Balm as it will take you about a month before it is ready for harvest - when the first “true leaves” form.
Good news - t’s worth the wait! This herb has a cute, serrated leaf with a light fuchsia under leaf. It is a member of the mint family and is often used by pastry chefs as a delicate citrus garnish.
Lemon Balm has been around since the Greek and Roman empires and was mentioned by Theophrastus (the early-day Botanist) as a “honey-leaf”. Apart from adding the leaves to dishes to add flavour, it has been used for many medicinal purposes over the years.
