The leaves are green with red freckles whilst they are Microgreens and stems are pale green, succulent and tender. But as they age, they are a beautiful jade colour.
Mizuna is often used in Japanese cooking and has been revered in Kyoto before the Meiji era. In winter, Japanese will gather and mix Mizuna into fish soups or rice.
For something different, allow the micro to grow just a little past Microgreen stage until the first true leaves appear. Mizuna true leaves are beautiful and edgy.
You can also replant your Mizuna Microgreens into soil for full-size plants for salad leaves.
